Matcha

Matcha is a finely ground powder made from specially grown and processed green tea leaves. Unlike regular green tea, which is discarded after steeping, matcha is consumed whole leaves, making it a more concentrated source of nutrients and antioxidants. It is known for its vibrant green color, unique flavor, and cultural significance in the Japanese tea ceremony.

The production process of matcha involves several meticulous steps: shielding the tea bushes from direct sunlight for about 20-30 days before harvest to increase chlorophyll levels and enhance the green color, hand-picking the most tender leaves, briefly steaming the leaves to prevent oxidation, drying and sorting the leaves to remove stems and veins, and finally grinding the dried leaves (called tencha) into a fine powder using a traditional stone mill.

Matcha is known for its unique flavor, which is rich, vegetal, and slightly sweet, with a smooth texture and a hint of umami. The flavor of matcha varies depending on the quality and grade of matcha, with ceremonial-grade matcha being the highest quality, followed by premium and culinary-grade matcha.

Matcha's health benefits include high levels of antioxidants, particularly catechins, which help fight free radicals and support overall health. It can also boost metabolism, help with weight management, enhance calmness and focus due to the presence of L-theanine, and support the immune system.

To make traditional matcha, it is usually recommended to sift 1-2 teaspoons of matcha powder into a bowl, add a small amount of hot water (about 70-80°C or 158-176°F), and stir vigorously with a bamboo whisk (chasen) in a "W" or "M" motion until the tea is frothy. Matcha can also be used in cooking and baking.
