Pu'er tea, also known as Pu-erh or Puer, is a unique and highly prized fermented tea originating from Yunnan Province in China. It is named after the city of Pu'er, which historically served as a trading hub for this tea. Pu'er tea is renowned for its rich, earthy flavor, deep cultural significance, and potential health benefits. It is one of the few teas that improves with age, much like fine wine, and is often compressed into cakes, bricks, or other shapes for aging and storage.

Pu'er tea is broadly categorized into two types: Raw Pu'er (Sheng Cha) and Ripe Pu'er (Shou Cha). Raw Pu'er is made from sun-dried tea leaves that undergo natural fermentation over time, while Ripe Pu'er undergoes an accelerated fermentation process to mimic the aging of raw Pu'er.

The production of Pu'er tea involves several steps: harvesting, withering, pan-frying, rolling, sun-drying, fermentation, and pressing. The leaves are often compressed into cakes, bricks, or other shapes for aging and storage.

Pu'er tea is known for its deep, complex flavors, which evolve over time. Raw Pu'er tends to be fresh, floral, and slightly astringent when young, developing earthy, fruity, and honey-like notes as it ages. Ripe Pu'er has a smooth, rich, and earthy taste with hints of wood, chocolate, or even dried fruit.

Pu'er tea is celebrated for its potential health benefits, which include aiding digestion, lowering cholesterol, boosting metabolism, and being rich in antioxidants.

To brew Pu'er tea, it is traditionally brewed using a gaiwan or Yixing clay teapot. The tea leaves are rinsed with hot water to awaken them and remove impurities, then steeped with water heated to 90-100°C (194-212°F) for 10-30 seconds for the first infusion, gradually increasing the time for subsequent infusions. Pu'er tea can be re-infused multiple times, with each steeping revealing new layers of flavor.
