You can achieve the correct water temperature by boiling the water, then pouring it into a separate tea pot and resting it for a few minutes before adding your tea leaves.

The small bags constrict the tea leaves during steeping, and they usually contain lower-quality, machine-processed tea leaves. Also you want to stick to green tea blends that have natural flavors only, no preservatives or additives.
