Characteristics of Longjing Tea
·Appearance: The leaves are flat, smooth, slender, and bright emerald green, often described as "like a sparrow's tongue".
·Aroma: Fresh and delicate, with floral and nutty notes, reminiscent of chestnuts or orchids.
·Taste: Crisp, mellow, slightly sweet, with a clean and lasting aftertaste.
·Color: Light yellow-green, clear and bright.
·Four Wonders: Known for "green color, strong fragrance, sweet taste, and beautiful shape".

Production Process
·Picking: Hand-picked in early spring (before Qingming Festival), mainly young buds and leaves. The highest grade Mingqian tea is picked before April 5.
·Processing:
De-greening: The leaves are fried in a large pot to stop oxidation and keep their green color.
Shaping: Skilled craftsmen use ten traditional techniques (such as grabbing, shaking, and tying) to flatten and shape the leaves.
Drying: Slow drying ensures that the tea leaves retain their aroma and freshness.

·Stew Time: 1–2 minutes for the first brew; tea leaves can be re-steeped 2–3 times.
·Teaware: Use glass or porcelain cups to appreciate the unfolding of the leaves and the clarity of the tea.

Varieties and Grades
·Varieties: Classified by region (e.g., Shifeng, Meijiawu, Hupao) and quality. The most prestigious is Shifeng Longjing, grown near Shizifeng.
·Grades: Ranging from special to 5, with special and premium grades reserved for premium teas.
